Eat a Rainbow: Dress your Plate with a Full Palette of Color

Spring is one of my favorite times of the year. I love the colors…the bright green new leaves on the trees, the pink blossoms on the crab apple trees and the riot of color as the tulips bloom. It’s also a great time to think about adding color to your diet to help weight loss success!

Fruits and veggies contain vitamins, minerals and other compounds that help our bodies fight off disease and keep us healthy. The color of a fruit or plant is associated with unique compounds that have different health benefits.

  • Red fruits and vegetables get their color from lycopene and anthocyanins which may help reduce the risk of several types of cancer.
  • Orange/yellow fruits and vegetables are usually colored by “carotenoids.” which help maintain healthy eyes and may reduce the risk of cancer and heart disease.
  • Green fruits and vegetables contain lutein, which may help reduce the risk of cataracts and age-related macular degeneration. Leafy greens and broccoli also are great sources of folate, a B vitamin that helps reduce risk of birth defects.
  • Blue/purple fruits and vegetables are colored by anthocyanins, powerful antioxidants that may help reduce risk of cancer, stroke and heart disease, in addition to improving memory.

All of the these colorful veggies and fruits have very low energy densities which means I can fill up on large portions without worrying about sabotaging my diet plan. I try to dress my plate with a full palette of tasty veggies and fruits everyday – like a rainbow. It really helps me feel full and satisfied. Try it! You’ll be amazed at how good you feel.
